    Soak 2 cups of saboodana with water covering it overnight. Needs minimum 4 hours of soaking. Once the water is absorbed you comb your hand thru the saboodana and air them. if dry sprinkle little water and comb. Do this periodically for every 30 mins. The soaked beads will be soft and double the size.

    Dry roast the peanut and powder the same.

    Wash the potatoes and dice them to 1/2” and cook in microwave, drain them. Set aside

    When ready to make the dish, cut green chillies and chop cilantro. Sprinkle the peanut powder over the soaked saboodana and mix gently. If you mix hard it will become paste.

    In a pan heat up oil on medium flame, and add hing, jeera, green chillies . Stir few times and add drained cooked potato and little salt. Sauté for few mins till potato begin to turn brown.

    Add saboodana mixed with peanut powder to the pan. Add salt and gently fold them few times till the seasoning, potatoes are well mixed. Lower flame.

    Close the pan with lid for 40-45 secs and fold again. The saboodana now starts becoming glossy. Give 5 mins break and fold again. Continue this process till the saboodana is 80 % done. Off the stove. Add lime juice and chopped cilantro and fold once.

    Saboodana is ready to be served!

    You can serve saboodana with thick cold yogurt.
