Roast Rava on Medium-Low for 7 mins. Look for nutty aroma and slight color change. Keep aside.

Boil water. Note if the sooji is fine you may need less water. The amount of water and oil combo depends on how soft or coarse you need.

Add roaster Rafa and mix loosely.

Add hot water (2 1/2 -3 1/2 cups per 1 cup rava).add salt to taste. Mix well.

Cover and let it sit on low flame for 10 mins (or more). Water to should have been absorbed and when you turn with ladle it should be soft and not stick to side. If it does add little oil or guess. Allow it to sit for few mins and off the stove.

To serve: take a small cup. Smear with ghee. Add few leaves of cilantro.add coconut flakes(optional), sugar crystals ( optional). Spoon a ladle of up a. Press and even it out. Turnover the cup on to a plate. Serr e with chutney.

Heat oil in a pan. Add 1 spoon of ghee.

Add mustard seeds (let them crackle).

Add urad daal and hing. Cook until lightly golden.

Add curry leaves, ginger, green chilies.

Add onions + pinch of salt → sauté until soft (not deeply browned).

Add carrots and vegetables. Cook for 2-3 mins
