Pour milk in a thick bottom stainless steel vessel. Add sugar and rice then stir.

Cook in either instapot or pressure cooker (a) Instapot: 20 mins. When pressure is gone switch to sautee mode with lid open. Keep stirring for 5 mins till it boils well. (b) Pressure cooker: Cook for 2 whistles and then lower the flame. Let the cooker be on simmer for 15 mins.

If method b is followed then after pressure is released, Place on stove. Keep on medium fire till the milk boils. Stir occasionally so that the milk does not burn. This is the stage you can taasteand add more sugar if you need . However when doing for pooja don’t taste 😀sugar proportion is 1 cup milt - 1/4 cups sugar. If you want the payasam to have more rice content you can add 3 tabs- of broken rice.
