    Mix well until a stiff dough forms, adding water as needed.

    Knead dough on a lightly floured surface until smooth.

    Rub hands with olive oil and knead dough one more time.

    Wrap dough and let rest for 30 minutes to 1 hour. Or in the fridge up to 48 hours.

    Roll dough by hand or with a pasta machine to desired thickness, then cut into strips of desired width and length.

    Boil water and cook for 10 mins.
