Aloo masala for dosa/puri

    Steam potatoes till they are soft. Peel the skin and allow to.cool. Then squish them or dice them to break into small pieces.

    Chop onions.

    Take a kadai add oil and wait till it heats up.

    Add mustard seeds. When they splutter, add urad daal, Chana daal, fenugreek seeds, hing, and red chilly. When daal turns brown, green chillies and ginger. Sauté for few secsonds.

    Add onions and sauté till they are translucent. Add salt, turmeric and mix gently. Add the diced potatoes and 1/2 cup of water. Break few of the potatoes gently. Mix, cover with a lid and keep on low flame for 2 mins.

    Remove the lid and mix. It should be thick gooey mixture and not runny. If liquify, just leave it on low flame for the water to evaporate. . Taste the dish. If it needs more salt or spice, add red chilli powder. Add lemon juice, cilantro and curry leaves. Mix gently. Off the stove.

    Masala is ready to eat.

    You can use this as filling for dosa or side dish for puri.
